1. Ingredients

  • 1kg sliced onions + 2 cups of Coke + salt & pepper
  • Philadelphia cream cheese
  • Sausage, bun, and pure mustard

Coke? Really?

Yes. Philadelphia cream cheese has a tangy, sour taste. To balance this, you need sweetness—Coke is perfect. It adds sugar, acidity, and deglazing power, making fast, flavorful caramelized onions.



2. Step-by-Step: Coke Onion Hack

  1. Slice your onions thin. Thinner = faster browning.
  2. Heat oil in a pan and start sautéing the onions.
  3. Don’t pour all 2 cups of Coke at once! Instead, deglaze the pan gradually as things start to stick.
  4. Keep sautéing until the onions turn dark brown and moisture evaporates. Done right, this gives you “dark caramelized onions” with deep flavor in less time. Salt & Pepper to your taste.
  5. Why it works: Coke = sugar + acidity + deglazing → fast caramelization
  6. Cool it down, store it in the fridge. Reheat in a pan before serving.
  7. Planning to keep it longer than 3 days? Freeze it in a ziplock. Texture might change, but taste stays solid. Tested.

3. Cream Cheese Tips

Philadelphia cream cheese is too firm straight from the fridge. Even on a warm bun, it’s hard to spread.Here’s what to do:

  • Best: Let it sit at room temp based on expected orders. Eat leftovers at the end of service.
  • Alternative: Gently warm it over a double boiler with a few drops of milk and whip it—smooth and spreadable. Keep it around 50°C (122°F). Too hot = it’ll split.
  • Another tip: Mix with a little milk + salt, put in a piping bag, and squeeze. But cold cheese won’t flow well. Let it sit 30 mins at room temp, or rest the piping bag on warm water before serving.
